Horse back riding
As you may or may not know, Hawaii had "Cowboys" and Ranching traditions well before they were established in the Western part of the mainland in the mid-1800's. The Hawaiian word for cowboy is "Paniolo". There are many places to enjoy horse back riding tours.
On the West Side:

- Lahaina Stables is just south of Lahaina nestled in the foothills of Launiupoko Valley about 10-15 minutes. They have Morning Rides, 8:30am-ish and a Sunset ride that go into the Launiupoko Valley. - Thompson Ranch & Riding Stables in located in Kula area, which at 2300 ft level on Haleakala. Views from the ranch are gorgeous vistas of south Maui, Kahoolawe, and Lanai.
